Marcello Garetti took his first steps in a number of historic Milanese restaurants. After 5 years, moved by a great passion for cooking, he decided to gain experience in the world of fine dining and moved first to Forte dei Marmi, to the Lux Lucis restaurant (with 1 Michelin star), and then to Davide Oldani’s D’O restaurant (with 2 Michelin stars) where he stayed for 4 years. Marcello loves straightforward cuisine with few frills, dictated by a ‘balance of taste contrasts’.
Ana Rosy Bollecchino began her culinary journey at Montecatini Terme’s prestigious hotel school at the age of 14. After graduating in July 2019, she swiftly joined the Belmond at Castello di Casole d’Elsa in Siena. Ana’s path led her through internships at renowned establishments, including the Mythos Hotel chain and Mercure Hotel chain. She specialized in pastry as a pastry commis at Castello di Casole d’Elsa. In May 2021, she furthered her expertise in French pastry. Ana now excels in crafting vegan and gluten-free cakes, tailored to specific dietary requirements.
